There's one cake I make every year, multiple times, as soon as Autumn arrives. It makes me feel all warm and cozy inside, it's my mum's favourite and it's really not bad for you at all. I crave it all year round but I only bake it this time of year so it really is special, it has became a tradition in my home and hopefully it will continue to be. 

Ingredients

  • 1 large apple (around 300 grams)
  • Juice of 1 lemon
  • 1 1/4 cups finely ground almonds
  • 1 cup self-rising flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 tablespoons ground cinnamon
  • 3 large eggs
  • 3/4 cup granulated sugar
  • 2 cups peeled sweet potato, finely grated 

Method


  1. Preheat the oven to 175ºC. Grease the base and sides of a 20 centimetre round pan and line it with parchment paper or bread crumbs.
  2. Peel, core and cut the apple into 5 centimetre cubes and toss them in a small bowl with the lemon juice.
  3. In a different bowl, combine the ground almonds, flour, baking soda, salt and cinnamon and set aside.
  4. In a large mixing bowl, using an electric mixer, whisk together the eggs and sugar until tripled in size, this should happen in about 3 minutes on high speed. Add the grated sweet potato and combine. Lower the speed and add the dry ingredients. Using a rubber spatula, gently fold the apple cubes in the mixture.
  5. Pour the batter into the prepared pan, at this point you can add a few thin slices of apple to decorate the top, and bake for 30 minutes. After half an hour in the oven, cover the top with aluminium foil and bake for an additional 30 minutes.
  6. Remove the cake from the oven, let it cool and prepare yourself to get addicted to the best cake ever.
